Growing Principles

Dry Farming
Relying solely on natural rainfall creates a deep root system, forcing the trees to pull nutrients from deeper soil layers. This results in oil with a remarkably complex, robust flavor profile and exceptionally high polyphenol counts.
Restorative Pruning
Each tree is evaluated and pruned entirely by hand during the winter dormancy. This selective thinning allows optimal sunlight penetration and airflow, preventing disease naturally and ensuring every surviving olive receives maximum nourishment.
Cover Cropping
Between the rows, we allow native flora to flourish. These ground covers prevent soil erosion during heavy rains, fix atmospheric nitrogen naturally, and provide a habitat for beneficial insects that protect our crop.
The Critical Window
Timing is the single most crucial factor in producing premium oil. We begin our harvest early in the season while the olives are still green. Though this yields significantly less oil per pressing, the result is exponentially higher in antioxidants and vibrant, peppery flavor notes.
